Finely chop a Red Onion or a couple if they are small…
Wash and finely chop the fresh Herbs here – Dill and Chives are good together but you could use any herbs you really like
(Coriander and Mint would go well with Asian food; Basil and Parsley with Italian?!)
Mix the Herbs and Onions together
Serve in a bowl, garnished with a halved Tomato, and a really good squeeze of Lime or Lemon
This would be delicious as a side dish to a piece of smoked salmon or trout…
