Cucumber & Radish Salad

I have loved radishes since reading about them in Beatrix Potter - but never really ate many growing up. I did try to grow them recently - but was dismally unsuccessful (although the squirrel dug them all up, so it is possible he really liked them; I never heard back)... Now that new spring radishes are appearing in greengrocers all over the place, I am using them in all sorts of (mostly) salads... They are spritely and fresh, upbeat and fun - and they are a great colour too. This healthy and pretty salad is refreshingly delicious, and predictably low in cholesterol.

Ingredients

  • Lettuce
  • Radish
  • Red Onion
  • Mint or Parsley

Wash the Lettuce leaves

Wash and chop the Radishes, Cucumber and Red Onion into neat little cubes (this isn’t absolutely necessary but does look lovely and taste great!)

Lay out the leaves on a serving plate and cover (artistically?!) with your chopped Radish, Cucumber and Onion

Dress with Lime or Lemon and a tiny drizzle of Rape Seed Oil

Chopped fresh herbs are good here too – Mint or Parsley would work well – also Dill
