Cucumber, Leek and Apple Salad

I can't recall exactly where I read / heard about this salad, but I definitely remember making it when we were students, years ago and living in a house with 7 housemates always wrestling for space in the kitchen. It is fresh and tasty - and is very good served with chicken dishes, especially a burger! It is also good with beef dishes, and with a salmon steak too. Healthy and easy to prepare, it is as tasty the next day as leftovers - and makes a refreshing change to coleslaws with BBQs in the summer.

Ingredients

  • Third of a Cucumber
  • 2 or 3 Leeks
  • 1 Apple
  • 1 tsp Homemade Mayo
  • 2 tbsp Fat Free Yoghurt (Natural or Greek)
  • Salt & Pepper
  • Lemon Juice

Wash and chop the Cucumber into small chunks

Finely slice the Leeks and wash very carefully – dry on kitchen paper

Finely chop the Apple

Mix the Cucumber, Apple and Leeks together with the Mayo, Greek Yoghurt and Lemon Juice.  Season with Salt and Pepper and leave for half and hour or so in the fridge before serving

Excellent with Chicken or Turkey dishes… Also on the side with BBQ’d chops or Veg Kebabs and Sweetcorn on the Cob
