Cucumber & Ginger Salad

Super light, fresh and healthy...

Ingredients

  • Cucumber
  • Red Onion
  • Ginger
  • Garlic
  • Lime (or Lemon)
  • Rice Wine Vinegar (or similar)
  • Rape Seed Oil
  • Sesame Seeds
  • Fresh Chilli

Slice a Red Onion and add to a medium mixing bowl (ie big enough for your whole salad)

Add the juice of a lime, a dash of rice wine vinegar (raspberry vinegar is good too – or white wine vinegar).  Leave the onions in the vinegar for a while to marinate (hour or so)

In a pestle & mortar, squash up a Garlic Clove and about the same amount of Ginger – it should be smooth ish.  Add to the onions with a good dash of rape seed oil and give it all a good stir

Using a vegetable peeler, peel the Cucumber lengthways into long strips, and add to the Red Onion (obviously you can slice it too – it’s just that sometimes cucumber slices aren’t so exciting)

Give everything another gentle stir – you can leave for a few minutes, but best to eat quickly so it is still fresh and has a little bite.  Serve sprinkled with Sesame Seeds & Fresh Chopped Chilli (both optional)
