Cucumber & Broad Bean Salad

It might be hailing and rainy outside, but my poor cucumber plants are still limping on in the garden... and although I didn't think you could buy broad beans now, I found these at my greengrocers, and they were grown in Kent which I thought was rather brilliant. The bright green beans and the crunchy cucumber are a great combination, and good friends to falafel and flatbread, or to some grilled fish, mackerel in particular (maybe with an extra slice of orange?!).

Ingredients

  • Cucumber
  • Broad Beans
  • Red Onion
  • Lettuce
  • Extra Virgin Olive Oil
  • Dijon
  • Lemon

Pod the Broad Beans and blanch them in boiling water for 5 minutes before peeling off the skin (unless they’re really little, and the skin isn’t too thick)…

Wash and slice the Cucumber

Slice a Red Onion

Wash the Lettuce and gently dry the leaves

Arrange on a large plate, Lettuce first – then the Cucumber, Beans and Onions

Dress with a mixture of 3 tbsp Olive Oil whisked together with 1 teaspoon of Dijon Mustard and the juice of 1 Lemon (season to taste, and add extra Oil or Lemon)

This is a deliciously healthy salad to serve with fish dishes, with falafel or fritters, or on the side with some pizza or pasta
