Wash a large Courgette and using a vegetable peeler, peel it into long ribbons
Finely chop half a Red Onion
Wash and chop some Chives
Finely chop a little Red Chilli
Serve the Courgettes, piled on a plate with the chopped Red Onion, Chilli and Herbs sprinkled on top
Just before serving – dress with a Mustard Vinaigrette [2 tbsp Extra Virgin Olive Oil, 2 tsp Wholegrain or Dijon mustard, juice of half a Lemon, 1 tsp Honey - whisked together in a bowl]
