Corn & Pepper Salad

Simple, but excellent with BBQ'd chicken, with lasagne, and with pizza too.


  • Lettuce
  • Red Onion
  • Red Pepper
  • Fresh Corn on the Cob (or tinned Corn)
  • Cherry Tomatoes
  • Parsley


  • Juice of 1 Lemon
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tsp Clear Honey
  • 1 large tsp Dijon Mustard
  • Black Pepper & Salt

To prepare the Salad… wash the Lettuce leaves

Wash the Tomatoes

Slice the Red Onion and wash and slice the Red Pepper

Slice the Corn off the Cob and fry in a pan (without Oil) for a few minutes until the kernels start to blacken… don’t stir too much but don’t let them burn either!

Whisk all the Dressing Ingredients together… Taste and season accordingly

Assemble the Salad, Lettuce first, then the Peppers, Onions and Corn.  Serve the Tomatoes on the side, whole… Sprinkle the Parsley over the Salad… some chopped Red Chilli would be good too

Dress the Salad just before serving
