Cod with Garlic Crumb

Cod is a special fish - and this recipe is a great way of keeping the fish cooked simply - whilst still adding an exciting twist, taste wise. The garlicky breadcrumbs make the perfect topping for the fish, and combined with a baked potato, a green salad and a spoonful of homemade mayonnaise or tartare sauce - this is a really special supper - not to mention an especially healthy one!

Ingredients

  • Cod fillets or steaks
  • Wholegrain bread – 2 slices
  • 2 Cloves Garlic
  • Flour
  • Salt & Pepper
  • Herbs to serve

Get the breadcrumbs ready first – whizz up a couple of pieces of bread (any kind, but wholegrain is definitely healthiest, and particularly delicious with fish) and a couple of cloves Garlic

Heat a pan and when hot – add the Garlicky Breadcrumbs

Do not stop stirring now!!  This is important – otherwise they’ll burn… and even if at the beginning it seems like they are taking a while – remember that they go from ‘not cooked at all’ Breadcrumbs to ‘OMG they’re completely black’ Breadcrumbs in the blink of an eye…

When golden brown, and making a crispier sound as you stir them (!) – pour the Breadcrumbs onto a plate to cool

(These little breadcrumb beauties are also good sprinkled on salads, steamed veg and risotto or pasta dishes)

When you’re ready to eat – lightly coat the Cod fillets in seasoned Flour… Heat a pan and add just a tiny bit of Olive Oil

Fry the Cod, skin side down first, for a few minutes (maybe 3 or 4 minutes?) – then turn the fish and cook for roughly the same time on the other side

You’re after moist but cooked fish (only just starting to flake, rather than really flakey…)

Serve on a plate with the Garlicky Breadcrumbs on top, and some fresh Herbs (Parsley or Basil maybe?)

Particularly good with tartare sauce and a big salad…
