Chocolate Cookies

My sister LOVED these cookies... Her husband's face might have flinched very slightly when I started banging on about how amazing it was that there wasn't any butter in these (I can go on), but even he had to admit that they were really, really delicious. And he ate a lot of them; so presumably wasn't just being polite. These chocolate cookies are healthy, tasty and also super easy to bake at home... so maybe make 24 instead of just 12?!


  • 1 Free Range Egg
  • 125g Caster Sugar
  • 1/2 tsp Vanilla Extract
  • 4 tbsp Extra Virgin Olive Oil
  • 6 tbsp Cocoa Powder
  • 75g Plain Flour
  • 1/2 tsp Baking Powder
  • Pinch Salt
  • Icing Sugar (for squashing them in….)

Makes 12 Cookies…

Whisk the Egg, Sugar and Vanilla till creamy

Whisk for another minute or so, adding the Olive Oil

Fold or stir in the Cocoa, Flour, Salt and Baking Powder (maybe sieved?)

By this point the mixture will look very unlike Cookie Dough…. but don’t worry, just put the bowl in the fridge for a few hours to firm up

Pre-heat the oven to 170˚c

Line a baking tray with (good) greaseproof paper

Take a dessert spoon of the mixture, roll it into a ball and squash it into a cookie shape before dusting all over in Icing Sugar, pressing flat-ish, and putting on the tray

Give them 10 mins in the oven!  Cool on a rack before eating
