Chive & Piquante Pepper Salad

There are literally not enough days in the year for the sheer volume of simple (but brilliant) salad combinations that exist in the world - after all, a good salad is definitely the way to the heart of any healthy cholesterol-lowerer... Piquante Peppers always cheer up some salad leaves, and this pepped up side dish is deliciously good with all sorts of things.

Ingredients

  • Lettuce and Salad Leaves
  • Spring Onion
  • Piquante Pepper
  • Chives
  • Dressing

Wash and dry the Lettuce and Leaves

Wash and chop some Spring Onions

Wash and chop a handful or two of Chives

Also drain and slice some Piquante Peppers (I use them from jars, but you can also make your own – see recipe here)

Arrange the Lettuce and Leaves on a plate, and scatter the Peppers, Spring Onions and Herbs over the top (Dill would be good here instead of Chives, maybe Basil?!)

Serve with a drizzle of good dressing (maybe Lemon Juice, Oil and a little Maple Syrup?)
