Cut up your orange (any sized pieces!), your red onion, tomatoes. Wash your chicory and separate the leaves
Finely chop your herbs
Lay the chicory leaves out across a plate, and arrange the other salad ingredients on top
Spinkle your herbs over the salad
Mix up 1 teaspoon of Dijon, 1 tablespoon of Red Wine Vinegar with 3 tablespoons of Olive Oil and drizzle all over the salad
Enjoy – is especially good with fish or chicken; also with tagines
