Carrot & Almond Couscous

Couscous isn't always the most exciting thing - but this dish is fragrant and delicious. It is light and fresh enough to go well with a rich stew or tagine, but tasty and robust enough to match a simple roasted pepper too. This couscous recipe is low fat, low in cholesterol and all round a very healthy option.

Ingredients

  • 1 Mug Couscous
  • 1 Red Onion
  • 1 Carrot
  • Large Handful Roasted and Flaked Almonds
  • Fresh Mint
  • Lemon Juice
  • Seasoning

Put the Couscous into a bowl and cover with the same amount of boiling water

Place a clean tea towel over the bowl and leave to steam for 10 – 15 minutes before fluffing up with a fork…

In the meantime, grate a Carrot and finely chop the Red Onion and Mint

Once the Couscous is a little cool, and fluffed up – add the Carrot, Onion and Almonds

Mix – and add the Mint and a squeeze of Lemon Juice, maybe some seasoning
