Butter Beans & Fresh Tomatoes

Beans are remarkably healthy - and thoroughly under-rated in terms of how tasty and delicious they can be after about five minutes in a pan. Just a couple of extra ingredients, and you have a feast waiting to happen.

Ingredients

  • 1 Onion
  • A Tomato or 2
  • 2 Cloves Garlic
  • 1 Tin Butter Beans
  • Salt & Pepper
  • Fresh Parsley
  • Red Wine Vinegar

Chop the Onions into slices

Wash and dice the Tomatoes (use as many as you fancy, I only had one)

Heat a pan and add a little Extra Virgin Olive Oil.  Add the chopped Onions and cook for 5 mins or so on a pretty high heat.  Keep stirring, but let them catch a little colour too

Crush or chop the Garlic Cloves and add them to the pan briefly, stirring

Now add the drained Butter Beans and the chopped Tomatoes

Cook on a high heat for a few minutes – not stirring too often so that the Tomatoes and Beans cook, but not letting them burn either

When you’re happy they are done (they only take a few minutes to cook) – add some seasoning and a tablespoon of Red Wine Vinegar.  Stir before serving with some chopped Parsley on top

These Butter Beans are delicious with lamb, or chicken.  As a main course they are really good with some Focaccia and a lovely Salad
