Broccoli, Red Onion & Chilli

The combination of the words 'stir' and 'fry' make me shudder slightly as I think back to the terrible student kitchen I once occupied (along with 6 other scruffs)... We were always stir-frying; possibly because woks were a new kitchen phenomenon in the UK in the early 90s; possibly because none of us had any other culinary skills whatsoever. Joyfully, this stir fried broccoli is a far cry from dodgy student food; it's actually delicious. And you don't need a wok...

Ingredients

  • Broccoli
  • Red Onion
  • Fresh Red Chilli
  • Olive Oil
  • Salt & Pepper
  • Lemon (optional)

Wash the Broccoli

Slice the Red Onion and the Chilli

Put a pan on the heat with a very tiny bit of Olive Oil

When hot – add the Broccoli, Red Onion and the Chilli and stir-fry for a few minutes. Add a tiny pinch of Salt

After 2 or 3 minutes, add a dash of Lemon Juice

A minute later and the Broccoli should be cooked but still have a bit of bite… cook for longer if you prefer

To serve, drizzle with some more Lemon Juice (maybe a little Rape Seed Oil) and some Black Pepper

This is good with roasts and with traditional dishes like Shepherds or Cottage Pie
