Big Healthy Salad

Super quick and easy to make, and a great combination of salad stuff, especially served on the side with some pizza or pasta. This is a particularly good way of serving salad if you you're feeding lots of people... everyone can help themselves to what they fancy; and although it is really simple to prepare, it looks great and tastes delicious too. And that's without mentioning the healthy thing...


  • Lettuce
  • Tomatoes
  • Red Onions
  • Herbs
  • Cucumber
  • Piquante Peppers
  • Pickled Hot Green Chilli’s
  • Fresh Red Chilli Pepper

Wash the Lettuce leaves

Wash the Tomatoes

Wash the Cucumber and slice thinly

Peel and finely chop the Red Onion

Wash the Herbs… I used Broad Bean leaves, Rocket and some Parsley.  Mint, Chervil or Coriander would work….

Drain the Piquante Peppers (I buy them in a jar – but any kind of Peppers would work…)

Drain the Hot Green Chilli Peppers (again, I buy Fragata ones in a jar…)

Finely slice some fresh Red Chilli Pepper

Arrange the components of salad on a very large plate or plates…

Either serve with wedges of citrus and some Olive Oil in a jar or jug… or make a dressing to serve on the side

This Big Healthy Salad is great served with Pizza or Pasta in particular – or some simple White Fish or (lean) Steak…
