BBQ Squash & Other Veg

I realise that this is hardly a recipe - but rather a brilliant selection of great vegetables, all of which are particularly delicious barbequed... This is definitely a good take on your '5 a day' and if you don't manage to eat everything, all of these veg are a great addition to a salad the next day.

Ingredients

  • Butternut Squash
  • Red, Orange, Yellow Peppers
  • Onions
  • Corn on the Cob
  • Chilli Sauce

Heat your BBQ…

Cut your Squash into wedges and remove all the seeds etc

Once your BBQ is hot – add the vegetables in the order they will take to cook longest

I work on the basis that Onions will take around 40 mins; Squash around 30 mins; Corn around 20 minutes (keep moving them if you don’t have the outer husk to protect the sweetcorn); Peppers around 20 minutes too…

Keep everything moving on the BBQ – I brushed the Squash with some Chilli Sauce occasionally to give it a bit of a kick and add a sweet marinade taste

Ultimately you want soft vegetables that have a bit of bite, but that are definitely cooked

Once done and chargrilled (see picture, I may have slightly overdone it!), these vegetables were delicious with Pilav and some Yoghurt – covered in fresh herbs, especially mint
