Apple Salad

An apple a day is supposed to be really good for lowering your cholesterol (and famously keeping the doctor away at large)... Who'd have thought that staying healthy would consist of such tasty and delicious salads?!

Ingredients

  • Lettuce
  • Apple (Braeburn are good)
  • Red Onion
  • Chives, Dill or Parsley (or combination)
  • Capers (optional)
  • Mustard Dressing

Wash and chop a Lettuce, however you fancy it

Slice a Red Onion

Chop your fresh Herbs

Drain your Capers (if you are using them)

Arrange on a large plate (make plenty, this is really good for you!)

Drizzle with dressing and enjoy with chicken or pork – BBQ’d or Roasted

(To make a great mustard dressing – use 1 Tbsp Red Wine Vinegar to 4 of Extra Virgin Olive Oil and add a good dollop of Dijon Mustard and some Black Pepper – add a little squeeze of Lemon Juice before testing and adding a little of what you fancy…)
