Amaretti Biscuits

These biscuits are a revelation to anyone trying to eat less fat - they do contain sugar, but not an ounce of butter!

Ingredients

  • Sugar
  • Apricot Kernels
  • Almonds
  • Egg White

Since this no-cholesterol malarkey, I have spent a lot of time (probably more than is healthy) reading the back of labels in the shops.  I have been shocked at some of the stuff you learn whilst reading this information (cheese, for example is surprisingly easy to give up when you actually read how much saturated fat it contains) but every so often you have a miraculous food shopping moment when you discover that something is pretty much cholesterol-free.

Amaretti are one of those moments… They only contain sugar, apricot kernels, almonds and egg white.  My conclusion on this is that although apricots and almonds probably do contain some level of fat – I’d be very surprised if this wasn’t one of the fats that contributes to the good cholesterol you need to reduce the bad stuff (??!).

Either way these are great little biscuits and don’t taste at all as butter-free as they actually are.
