Wholemeal Pitta

These full-of-wholemeal pitta bread are very delicious stuffed with all manner of healthy fillings... Enjoy them with Middle Eastern Mezze, or with some Italian meatballs; with tuna salad, or with some leftover lentils and red pepper. The list is deliciously endless in terms of tasty and nutritious things to go with Pitta...

Ingredients

  • 250g Strong Wholemeal Flour
  • Large Pinch Salt
  • Drizzle Rape Seed Oil
  • 175ml Hot Water
  • 1 small tsp Yeast (fast action)

Mix all the ingredients in a large bowl… 250g Strong Brown Flour, a large pinch of Salt, a drizzle of Rape Seed Oil and 175ml of hand hot Water

Mix together and knead for 5 minutes…

Leave in a bowl for a while, floured slightly on the outside.  15 minutes would work.  An hour might be even better…

When you are ready to make your Pitta, sprinkle some Oatbran or Semolina (or Flour) onto a clean baking tray

Pre-heat the oven to 180˚c

Knock the dough back into shape, and cut into 6 equally sized pieces

On a floured surface, roll each one out to the size of a Pitta.  Flour it slightly so that neither side is sticky, and place on the baking tray

You can leave them for an hour or so – or cook immediately…

Put them in the oven on a baking tray for 6 minutes, or until they have puffed up slightly, but are still soft and not browning

Keep them hot if you can, they’re much better warm (although not terrible the next day; you can toast them slightly!)
