Watercress & Parsley Salad

Quite a glamorous salad, this; possibly substantial enough to eat as a main course, but probably best served with something like burgers or pizza. Pasta would be another good side for this deliciously healthy salad which is simple and easy to make, but which transforms any meal into a feast.


  • Watercress
  • Parsley
  • Red Pepper
  • Red Onion
  • Cherry Tomatoes
  • Cucumber
  • Lemon
  • Olive Oil

Wash and finely slice the Red Pepper and fry in a little Olive Oil until slightly blackened around the edges (gives a much sweeter flavour).  Set aside to cool

Wash and finely slice half a Cucumber

Peel and slice a Red Onion

Wash and chop some fresh Parsley

Wash and gently dry the Watercress

Compile your delicious salad – Watercress first, then some stacks of Cucumber, Red Onion and Cherry Tomato and then the sliced Red Peppers.  Finish with a substantial flourish of Parsley…

Dress simply with a big squeeze of Lemon or Lime and a mere drizzle of good Olive Oil

Grilled fish would be another great thing to go with this healthy salad…
