Waldorf Remoulade

Am not sure if Waldorf Remoulade is actually a 'thing' but it is definitely a very delicious thing to do with celeriac... You essentially get all the upside of a Celeriac Remoulade, but with all the additional advantages of a Waldorf Salad. And voila, Waldorf Remoulade.... which is especially delicious with a slice of smoked ham.

Ingredients

  • Celeriac
  • Large Handful Gherkins
  • 75g ish Walnuts
  • Half an Apple
  • 1 Stick Celery

The Dressing

  • 2 tbsp 0% Greek Yoghurt
  • 2 tsp Homemade Mayonnaise
  • 1 tsp Dijon Mustard
  • Juice 1 Lemon
  • Pepper and Salt
  • 1 Garlic Clove, crushed
  • 1 tbsp Water

Prepare the Dressing first… In a large bowl, whisk together 2 tbsp 0% Greek Yoghurt, 2 tsp Homemade Mayonnaise, 1 tsp Dijon Mustard, the juice 1 Lemon,  1 crushed Garlic Clove and 1 tbsp Water.  If it looks a little thick, add a tiny dash more water.  Add plenty of Pepper

Finely chop the Gherkins and the Walnuts

Finely slice the stick of Celery

Grate half an Apple

Slice or peel the outside of the Celeriac off… Make sure it is clean and then grate it, not too finely for some bite (do this last as it will discolour if you leave it grated and without a dressing)

Add the Celeriac, Apple, Walnuts, Celery and Gherkins to the dressing and mix carefully

Taste and season; and serve with something simple like a slice of Smoked Ham.  Is also good on the side with a Burger (of the meat or vegetarian variety!)
