Tomato & Piquante Peppers

This tomato salad is quick to prepare, but super tasty and packs a punch if you add lots of chilli and herbs. It is a particularly healthy side dish for anything burger-esque, and also anything tapas-ey - not an ounce of cholesterol in sight, and plenty of flavour!

Ingredients

  • Cherry Tomatoes
  • Red Onion
  • Fresh Red Chilli
  • Piquante Peppers
  • Chervil (or Basil, Coriander or Parsley)
  • Red Wine Vinegar
  • Olive Oil

Wash and halve the Cherry Tomatoes

Finely chop some Red Onion

Slice your Piquante Peppers

Either use Piquante Peppers in a jar (Peppadew sell some good ones) OR make them by roasting a couple of Red Peppers for half an hour or so at 200˚c with a little Rape Seed Oil before splashing with a few tablespoons of Red Wine Vinegar (or Cider Vinegar).  Let them cool

Lay out the Tomatoes on a plate, and cover with the chopped Red Onion and some finely sliced Peppers.  Add some chopped Chervil (or anything else that goes with your meal) and sprinkle a dash of Red Wine Vinegar and a little Extra Virgin Olive Oil over the dish before serving

Is fabulous with BBQs…. not to mention with pizzas, pasta, fish, Mexican cooking, Middle Eastern cooking – in fact, almost anything!
