Thyme Roasted Potatoes

These roasted potatoes with thyme and onions are good with many things - including fish, stews, roasts, salads... Easy and quick to make, they smell wintery and delicious while they're cooking.

Ingredients

  • 2 Onions
  • Thyme
  • Salt
  • Potatoes
  • Olive Oil

Scrub and halve the Potatoes – smaller ones are good but it makes little difference what size they are.  Also halve the Onions

Lay them out on a baking tray lined with greaseproof paper and brush with Olive Oil

Sprinkle with Maldon Salt and cover with lots of Thyme (you can leave the stalks in, you can remove them before serving)

Roast at 200˚c for 25 – 45 minutes – basically until they are roasted, soft on the inside and crispy and golden on the outside

The onions will be soft and squashy and make this a great dish to go with Roast Pork (in which case you could also roast some halved Apples)
