Sweet Potato Fries

Sweet potatoes are much healthier and more nutritious than normal potatoes; and make really great chips. The knack of these particular sweet potato fries is cutting them neatly enough (I have to confess that this picture isn't my work... my husband's knife dexterity is significantly more precise than mine, and possibly less dangerous too, which is always good in the kitchen). Cooking them twice is a good way of making sure they stay really crispy and delicious.

Ingredients

  • Sweet Potatoes
  • Olive Oil
  • Maldon Aalt

Pre-heat the oven to 200˚c

Scrub the Sweet Potatoes

Very carefully cut them into 1cm (ish) square, long chips (see picture)

Lay them out in a single layer on a baking tray lined with greaseproof paper

Brush them with the tiniest amount of Olive Oil

Sprinkle them with Maldon Salt (not too much) and roast for 30 mins or so until crispy and cooked

[These are good to prepare earlier and then re-heat at 175˚c quickly before serving; they stay nice and crispy]

These Sweet Potato Fries are excellent with Five Spice Fried Chicken – or on the side with a lamb chop maybe…
