Give the Sweet Potatoes a good scrub, and then cut up them into quarters and put them skin side down on a roasting tray lined with greaseproof paper brushed with Olive Oil
Brush each chunk with Olive Oil and sprinkle with Salt (Thyme is good too)
Bake for about 25 – 35 mins on 18o˚c
Enjoy with Burgers, Chicken, Grilled White Fish… Greek Yoghurt is really good, so too is Chilli Sauce
