Stove Top New Potatoes & Rocket

In my mind, this was a Nigel Slater recipe - but when I checked the 'Real Food' book, his version actually features pancetta, double cream and full fat milk together with a good portion of parmesan too. Clearly any and all of these additional ingredients are absolutely off the menu if you need to reduce your cholesterol - and believe it or not, this version is possibly nicer; it tastes simple, fresh, garlicky and salty all at once and is brilliantly low in terms of saturated fat!

Ingredients

  • New Potatoes
  • 1 Onion
  • 3 Cloves Garlic
  • Rocket Leaves

Slice an Onion

Slice your New Potatoes – about 5mm is good in terms of slice size…

Chop or squash 2 or 3 Cloves of Garlic

Wash your Rocket

Put a good sized pan on a low heat with some Olive Oil and gently fry your Onion – when it is soft add your Garlic

Let the Garlic colour slightly (very slightly) and then add all your New Potatoes and a good pinch of Salt and some Pepper

Stirring occasionally keep the Potatoes on a medium heat for about 20 minutes or until they are cooked (if they break up this is no problem)

Add your rocket – stir on the heat for a few moments – and serve into a dish

These are good hot, cooling down or cold (!) – excellent with simply grilled chicken or fish or with a big, fresh tomato and onion salad
