Spring Green Coleslaw

Full of the joys of Spring - this light and healthy coleslaw is truly delicious. With spring green cabbage it tastes fresher than its white cabbage counterpart - and the soft texture is also more velvety and smooth than some other coleslaws... In fact, you'd hardly believe it was so nutritious and good for you, let alone that it's so low in cholesterol!

Ingredients

  • Half a Spring Cabbage
  • 2 or 3 Large Carrots
  • 1 Onion
  • 2 tsp Dijon Mustard
  • 1 tsp Homemade Mayonnaise
  • 3 tbsp 0% Greek Yoghurt
  • Lemon
  • 1/2 Clove Garlic
  • Pinch Chilli Powder
  • Black Pepper & Salt
  • Parsley

Very finely slice the Spring Cabbage and the Onion

Grate the Carrot (the Carrots I used here were hardly orange; instead a light yellow which is why you can’t see them clearly in the photo!)

In a bowl – mix the Cabbage, Carrot, Onion with the Mayonnaise, the Yoghurt, the Mustard, half a clove of crushed Garlic, a pinch of Chilli, some Salt and Pepper and a massive squeeze of Lemon Juice

Mix well – and season to taste.

Leave in the fridge until you are ready to serve… it gets better after an hour or so.  Add the chopped Parsley just before serving so it keeps its colour…

Serve with burgers preferably (turkey burgers are great!) or with some pulled pork or beef (cajun pork recipe here…)
