Spring Chicken Marinade

I would describe this marinade as a 'hefty' herb marinade, with lots of woody herbs and quite strong and fragrant flavours that (brilliantly) don't get totally frazzled away on the barbecue. This citrus and herb elements definitely evoke the sense of early summer, and the dish tastes as fresh and delicious as it is healthy and low cholesterol. All round this is a great BBQ dish that will definitely make your neighbours envious as your chicken cooks in the open air...

Ingredients

  • 1 Free Range Chicken
  • 1 Stick Celery
  • Handful Rosemary
  • Handful Thyme
  • Handful Lemon Thyme
  • Few Sage Leaves
  • Handful Oregano
  • Handful Parsley
  • Some Chives
  • Zest of 1 Lemon
  • 5 Garlic Cloves
  • Salt & Pepper
  • Drizzle Olive Oil

Joint the Free Range Chicken and remove all the skin

Wash the herbs and dry them

Also take off the main leaves from the stalkier herb elements

Whizz the Herb Leaves and the Garlic and Lemon Zest, Olive Oil, Celery etc…

Once whizzed – marinade the Chicken pieces in the lemon-ey mix

Leave overnight if possible – even an afternoon would be good to get maximum flavour and taste through the meat

BBQ the Chicken pieces until properly cooked (you could also roast the Chicken in the oven at 200˚c for 30 minutes or until cooked)

Enjoy with a squeeze of Lemon and a good, green and healthy salad….
