Spinach & French Bean Salad

This is a great heavy leaf salad; good on its own for lunch, and great as a side to pizzas or pasta, maybe a piece of grilled chicken or fish?! Spinach is super good for you - is high in antioxidants and iron, especially when eaten raw or only blanched quickly - and so you can enjoy this delicious salad, knowing it is as nutritious and good for you as it is tasty...

Ingredients

  • French Green Beans
  • Spinach
  • Red Onion
  • Piquante Pepper
  • Red Wine Vinegar
  • Olive Oil

Wash the Spinach and lay out on a plate or serving dish

Slice the Red Onion and chop the French Green Beans up

Lay the Onion and Beans out over the Salad…

Top with some Piquante Peppers from a jar (Pepperdew are good)

Drizzle a little dressing over the Salad (1tsp Red Wine Vinegar, 1/2 tsp Dijon, 3 tsp Olive Oil)

Enjoy with all sorts of things – is a robust enough Salad to go with stews; but works brilliantly with pizza or pasta too
