Skinny Fries

In the cheerful pursuit of low-cholesterol-ness; the one thing I would definitely recommend buying for the kitchen is a silicon brush. A small one. Because brushing stuff with oil before you bake it means using considerably less oil than drizzling, or pouring etc. It also saves oil, which at Extra Virgin Olive Oil prices is, frankly, no bad thing. And remember, only use oils that you know are good for you... Olive Oil and Rape Seed Oils are sensible (and delicious) choices if you're after seriously healthy and skinny fries, which these definitely are.

Ingredients

  • Potatoes
  • Olive Oil
  • Maldon Salt
  • Malt Vinegar (to serve)

Scrub the Potatoes but don’t peel them

Carefully slice into ‘Skinny Fry’ proportions…

I’d recommend less than 1cm diameter, and as long as your Potatoes are; but you can clearly go any way you prefer with this…

Lay the Fries in a single layer on greaseproof paper on a baking tray / s

Brush very lightly with some Extra Virgin Olive Oil, using not very much Oil at all

Sprinkle with some Maldon Salt and bake at 190˚c for 30 mins or until the Fries are golden brown and cooked

Serve with some Malt Vinegar to sprinkle over the Skinny Fries – and enjoy with BBQs, with grilled fish or on their own with a big salad and some homemade mayo on the side…
