Simple salad & tasty dressing

Salad:

  • Beef Tomato
  • Some cucumber
  • Salad leaves

Dressing:

  • 1 Orange (or Tangerines / Satsumas)
  • 1 slice of above Tomato
  • 1/2 Red Onion
  • Handful fresh Mint (or Coriander)
  • 2 tsp Dijon Mustard
  • Lemon or Lime
  • Red Wine Vinegar
  • Olive Oil

The simplest things are often the best.  This very minimal salad is brilliant with spicy or very tasty food, and works well in particular with pilavs or rice dishes, also curries.

SALAD

Chop the beef tomato into slim slices and lay them out on a large plate

Chop the cucumber up, and sprinkle all over the tomato

I added some broad bean leaves, some spinach and some pea shoots – all of which were slightly on their last legs in what is a very wet and rainy garden right now

With a squirt of lime (or lemon) juice, this would be great with saffon rice and tandoori chicken

DRESSING

If you wanted to make this salad a bit more exciting, you could add tomato & orange dressing:

Chop your tomatoes and red onions

Add to a bowl and add your mustard, juice and zest from an orange, squirt of lemon or lime juice, a drop of red wine vinegar, some black pepper, a handful of chopped fresh mint (or coriander) and a really good glug of olive oil

Give it a good stir and taste – you may need to add a bit more of something! It should be citrus-ey and a bit spicy

This dressing is good with Middle Eastern style food, and works really well with grilled veg (eg asparagus or artichoke)
