Sardines in a Herby Crust

Oily-fish-tastic!! This recipe is super good for you, and also really easy to prepare....

Ingredients

  • Sardines
  • Herbs
  • 2 Cloves Garlic
  • 1 Lemon
  • Breadcrumbs (pref homemade)

Pre-heat the oven to 200˚c

Wash and gut the Sardines (or get your fishmonger to do this)

Finely chop the following – big handful parsley, basil, chervil, chives, coriander (whatever you fancy), 2 Cloves Garlic

Mix with Lemon Zest and half a cup of Breadcrumbs (or thereabouts) – add a lot of Black Pepper

Put the fish in a roasting dish and sprinkle your herby crust and a drizzle of food Olive Oil over the top before roasting for 20 minutes or until the fish is cooked through and has a crust on the outside – you can give them a turn part way through cooking, but they sometimes don’t stay in one piece to do this neatly!

Serve with mayonnaise or zero fat yoghurt…. A tomato salad is also delicious with this; and some roasted potatoes
