Roasted Red Cherry Tomatoes

Fruity and sweet; these roasted tomatoes are the kind of cooking that makes you look really good, although you have actually had to contribute very little to the delicious end result. Enjoy them alongisde pasta, risotto fritters, fish, chicken, burgers, focaccia, a good steak, croquetas, nut roast... the list is almost endless in terms of things that will taste great next to these lovely roasted cherry tomatoes and their juices.

Ingredients

  • Cherry Tomatoes
  • Salt
  • Extra Virgin Olive Oil

Pre-heat the oven to 190˚c

Line a roasting dish with baking paper (or not – but you’ll have more washing up to do…)

Wash and dry the Cherry Tomatoes before putting them in the dish

Drizzle with a very small amount of Olive Oil

Add a pinch of Salt and give the dish a shake so that all the Tomatoes have a light coating of Oil

Put the Tomatoes in the oven for 25 – 35 minutes or until they’re looking soft, starting to brown and have a lovely sweet juice surrounding them

You can eat these Roasted Cherry Tomatoes immediately with something like chicken or a lamb chop – a bean salad – or even just some really good bread.  They would be equally good mixed into hot pasta with some fresh basil, or on top of a pizza…

Alternatively you could let them cool down and eat them like a pickle or a relish – maybe with some capers (they’ll keep very well for a couple of days in the fridge)
