Roasted Orange Tomatoes with Thyme

I know, I know - this is hardly a recipe... Except that these little orange gems were absolutely delicious roasted gently for an hour or so with some crunchy Maldon Salt and a twig or two of thyme plucked from a garden that looked slightly sorry for itself after the storm this week. These would be delicious with lamb; very friendly with lots of salads; and heavenly stirred into some pasta with a big drizzle of Extra Virgin Olive Oil.

Ingredients

  • Orange Cherry Tomatoes
  • Thyme
  • Maldon Salt
  • Olive Oil

Pre heat the oven to 150˚c

Line a baking tray with some greaseproof paper

Wash the Tomatoes and halve them (any coloured Cherry Tomato would be good, or bigger Tomatoes, sliced into smaller bits)

Put them on the baking tray and brush with a very tiny amount of Extra Virgin Olive Oil

Sprinkle the Tomatoes with a crunch of Maldon Salt and some fresh (or dried) Thyme

Roast slowly for an hour or so, or until they’ve slightly dried out (ie rather than plain old cooked…)  The flavour should be sweet, salty and all round delicious
