Roasted Courgettes

Simply roasted, these courgettes are perfect as supper on their own with a decent salad. Alternatively they go brilliantly with lots of other things...


  • Courgettes
  • Extra Virgin Olive Oil

Pre-heat the oven to 180˚c

Wash, and chop the courgettes into large chunks

Line a baking dish with greaseproof paper and throw in the courgettes (not necessarily literally)

Drizzle or brush with a little Extra Virgin Olive Oil and sprinkle some Maldon Salt over…

Cook for 30 minutes or so, or until they are cooked but not too brown

These Roasted Courgettes would go well with a tasty salad, maybe with some Pine Nuts??!
