Red Cabbage Coleslaw

This is a fabulously tasty but also very healthy recipe for coleslaw.... It makes the best side dish for BBQ afternoons, and goes brilliantly with burgers, chicken or baked potatoes. Red cabbage 'slaw is also really good served with some pulled pork or beef brisket baps, of course with sliced gherkins.

Ingredients

  • Half a Red Cabbage
  • 2 or 3 Large Carrots
  • 1 Red Onion
  • 2 tsp Dijon Mustard
  • 1 tsp Homemade Mayonnaise
  • 3 tbsp 0% Greek Yoghurt
  • Lemon
  • 1 Clove Garlic
  • 1/2 tsp Smoked Paprika
  • Pinch Chilli Powder
  • Black Pepper & Salt
  • Parsley

Very finely slice the Red Cabbage and Red Onion

Grate the Carrots

Crush the Clove Garlic

Add the Cabbage, Carrot and Onion to a bowl and add the other ingredients – Yoghurt, Mustard, Mayonnaise, Garlic, Lemon Juice, Salt & Pepper, Paprika, and Chilli Powder

Mix carefully and season to taste – you might want more Yoghurt or Lemon?!

Allow the Coleslaw to sit for a while so that the flavours mix well before serving

Add chopped Parsley at the last moment!

This is very tasty with a baked potato – also on the side with a piece of grilled fish, maybe mackerel (devilled mackerel would be good too…)

(If you wanted to go less smokey with the taste – omit the Smoked Paprika)
