Quick Basil Pesto

If you're after healthy and delicious food, then cooking really good but simple pasta sauces will definitely stand you in good stead; it means you can transform a plain bowl of spaghetti or penne into something truly spectacular without using tons of ingredients or labouring in the kitchen for hours. This quick pesto is excellent as a garnish served on top of soups or stews, and good fried with some leftover roasted potatoes and some chilli flakes... It is also a brilliant use of some slightly wilting basil that would definitely have gone to waste otherwise.
Ingredients
- Basil
- 2 Cloves Garlic
- Extra Virgin Oil
- Maldon Salt (to serve)
- Lemon (to serve)
Wash and dry the Basil – use a whole (small) plant, or a very large handful of a bigger plant…
Peel 2 Cloves of Garlic
Together with 3 or 4 tablespoons of good Extra Virgin Olive Oil, whizz the Basil and Garlic up in a food processor (or very finely chop and then add the Oil)
Serve mixed into Pasta with a big pinch of Salt and a squeeze of Lemon… Some toasted Breadcrumbs or Nuts on top are the perfect addition
This Quick Basil Pesto will keep in the fridge for 3 or 4 days, carefully sealed in a clean jar with some extra Olive Oil on top to keep the sauce fresh
