Prawn Cocktail

Prawn Cocktail, with its slightly 70s-esque heritage, has got to be one of my all time favourite things - and this healthy version is genuinely delicious. I have read quite a lot of articles in the press and online that ponder whether seafood is high in cholesterol, and thus I've been slightly avoiding it - but I recently saw a tweet from a well known doctor personality saying this was complete twaddle, so I thought we'd live dangerously with this recipe...

Ingredients

  • Cooked Prawns
  • Lettuce
  • Avocado
  • 3 tbsp 0% Greek Yoghurt
  • 1 tsp Homemade Mayo
  • 1 or 2 tsp Heinz Ketchup
  • Big Squeeze Lemon Juice
  • Salt & Pepper
  • Fresh Chilli
  • Worcestershire Sauce
  • Pinch Paprika

Wash the Lettuce and arrange on serving plates

Chop the fresh Red Chilli ready for serving

Make the Cocktail Sauce by mixing together the Yoghurt, Mayonnaise, Ketchup, Lemon or Lime Juice (plenty), a dash of Worcestershire Sauce, a large pinch of Paprika and a crunch of Salt & Pepper.  Taste it and see what it needs more of… If you like a hot sauce, you could add a pinch of Chilli Powder too here

To serve – arrange the Prawns on top of the Lettuce and the Avocado (which you should only slice just before serving – otherwise it will go brown; although Lemon Juice can prevent this)

Drizzle the Cocktail Dressing over the Prawns and Avocado and sprinkle with chopped fresh Chilli

Serve with an extra wedge of Citrus Fruit…
