Potato Salad

The yoghurt-ey dressing on this potato salad makes this dish very light and refreshing in taste. It is particularly delicious served with roasted cold meat or with smoked fish, as well as being a picnic and bbq classic.

Ingredients

  • Potatoes
  • 1 Small Onion
  • 0% Natural Yoghurt
  • Homemade Mayonnaise
  • Dijon Mustard
  • Lemon Juice
  • 1 Clove Garlic
  • Fresh Parsley (or Dill or Chervil)

Scrub the Potatoes and cut into good Potato-Salad-Style chunks

Rinse them and them put on to boil in some salted water

Bring to the boil and simmer until soft to the point of a knife

In the meantime – mix a teaspoon of homemade Mayonnaise, 2 large tablespoons of fat free Natural Yoghurt, a crushed clove Garlic, a squeeze of Lemon Juice, a teaspoon of Dijon Mustard and some Salt & Pepper

Taste – and add a little of what you think it needs (if anything)

When the Potatoes are cooked – drain carefully and mix them in the creamy dressing

Mix in the fresh Parsley just before serving

This is delicious with Meatloaf – but also good with diner style Burgers – or cold Roast Chicken
