Pistachio Mini Meringues

Healthy and low fat dessert recipes can be difficult to find - and so meringues are really a bit of a bargain. You can add really nutritious things (like the Pistachios featured here) but even without the nuts, the meringue element of the dish pretty much only consists of sugar and egg whites, and both of these ingredients are very low in cholesterol. Enjoy these little Meringues with some coffee, or dipped in a little melted (dark) chocolate. A bowl of strawberries on the side would be a brilliant, and healthy, addition.

Ingredients

  • 25g Pistachio Nuts
  • 2 Large Egg Whites
  • 1/2 tsp Lemon Juice
  • 50g Golden Caster Sugar
  • 50g Icing Sugar

Pre-heat the oven to 130˚c

Very finely chop up the Pistachio Nuts

Whisk Egg Whites and Lemon Juice with an electric whisk until they form stiff peaks

Add the Golden Caster Sugar and whisk until stiff

Add the Icing Sugar and Pistachios, and fold carefully until combined

Spoon out onto a baking tray lined with greaseproof paper… you’re after little mounds of Meringue mixture

Bake for 20 – 30 minutes or until crisp outside but soft inside

Serve with a bowl of strawberries on the side!
