Pickles and Cucumber

Sliced fresh cucumber and pickled gherkins are kind of the two pole ends of the cucumber-world... and are utterly delicious together, particularly with burgers of the bean variety. A light and freshly baked roll, a bean burger, some slices of cucumber and gherkin, maybe a dollop of greek yoghurt... utterly delicious, and brilliantly (even surprisingly) healthy.

Ingredients

  • Cucumber
  • Gherkins
  • Red Onion
  • Cider Vinegar

Wash and slice the Cucumber

Slice the Gherkins

Slice the Red Onion and soak for an hour of so in a couple of teaspoons of Cider Vinegar (or Red Wine Vinegar, White Wine Vinegar etc)

Layer your salad up – larger Cucumber slices first, then some Red Onion and Gherkin a the top of the pile

Very good with bean burgers, with beef burgers, with BBQ’d chicken and with BBQ-ey stuff like coleslaw too. ¬†Also excellent in a flatbread kind of direction, with hummus and roasted red peppers?!
