Pickled Red Cabbage

This is a great dish to eat with Falafel or Bean Fritters of any sort - also with Tahini Sauce and some Flatbread... It is unbelievably quick to prepare, only needs an hour or so to 'pickle'! As usual, this dish is brilliantly cholesterol free and (I guess) pretty good for you.
Ingredients
- Red Cabbage
- Red Onion
- Red Wine Vinegar
Finely slice the Red Onion and the Red Cabbage…(in terms of proportion, use about a third onion to two thirds cabbage – but use whatever you fancy)
Drizzle with 2 tablespoons of Red Wine Vinegar and a tiny pinch of Salt
Leave to ‘pickle’ in the fridge for an hour or so
Serve with Flatbread stuffed with salad and Falafel and some 0% Greek Yoghurt
