Pre-heat your oven to 180˚c
Wash two Red Peppers (any kind, large, small, pointed or not are good!) and lay them on greaseproof paper in a baking dish
Sprinkle them with a little Rape Seed Oil (Olive Oil would be fine too…) and a little Maldon Salt
Put in the oven for 25 to 45 minutes until tender but not burnt! Drizzle immediately with a table spoon of Balsamic Vinegar
Throw the Basil leaves over – and extra Rape Seed Oil if you think it needs it – and serve warm or cold with lots of things… Pizza, Pasta, Grilled Fish or Chicken etc
Other combinations: Cider Vinegar & Dill or Chives; Red Wine Vinegar & Parsley; Balsamic & Mint; White Wine Vinegar & Chervil… try anything you fancy!
