Pea and Tomato Salad

I sometimes wonder if the pea is slightly under-utilised in salads... Here it is celebrated with juicy tomatoes and refreshing mint; and is a brilliant accompaniment to something spicy...

Ingredients

  • Salad Leaves
  • Frozen Peas
  • Tomatoes
  • Red Onion
  • Red or Orange Pepper
  • Mint
  • Lime (or Lemon)
  • Rape Seed Oil

To ‘cook’ your peas, fill a bowl with as many as you need (use lots – they are good for you and all fruit and veg go some way to reducing cholesterol… I used a couple of baby broad beans too) and pour boiling water over them

Leave them for 5 minutes and then drain and dry

Halve your tomatoes and chop your red onion & pepper

Lay your salad leaves (including lots of mint) out on a plate; add your tomatoes and red onion, pepper and then peas

Drizzle with a dash of lime (or lemon) juice and a little rape seed oil
