Ppre-heat the oven to 180˚c
Wash and quarter New Potatoes (lengthways)
Wash & slice the Spring Onions
Drizzle a little Olive Oil on the Potatoes and give them a stir before putting them in the oven in a roasting tray – give them 25 minutes
When nearly done but still firm, add a good pinch of paprika and either some fresh chopped Chilli or some dried Chilli Flakes
Pop the Potatoes back in and give them 5 or 10 more minutes until crunchy and cooked through
Serve, topped with the chopped Spring Onions – this is great with an omlette, or some grilled chicken – also a dollop of 0% Greek Yoghurt. This is also very good with a beef chilli.
