Lollo Rosso, Red Onion & Capers

This is a cracking salad to pair up with fish dishes, in particular with herrings, sardines or mackerel. That said, a lamb chop would be an equally delicious choice to go with the capers, red onions and cucumber...
Ingredients
- Lollo Rosso (or other Lettuce)
- Red Onion
- Capers
- Cucumber
- Lemon
- Olive Oil
Wash the Lollo Rosso leaves
Slice half a Red Onion
Drain a tablespoon or so of Capers
Slice some Cucumber
Serve the Leaves whole, in a bowl with the Red Onion and Capers scattered on top, and the sliced Cucumber on the side
Dress the Salad at the table, with wedges of Lemon and a little jug of Olive Oil
