Wash the Lettuce but keep the leaves whole… Slice some Red Onion and Cucumber too
Slice the Peppers into thin strips
Heat a pan with a little Olive Oil and when really hot, add the sliced Peppers
Don’t stir them too much as they’re cooking – you want them to get a little chargrilled…
Take them off the heat after 5 or 10 mins, when they’re starting to smoke a bit
Immediately put the Peppers into a bowl and add 2 tbsp of Cider Vinegar
Leave them to cool in the Vinegar until you’re ready to eat – just a spoonful of the Peppers will be like a delicious Salsa on the Lettuce, with the cooling Cucumber and the tangy Red Onion…
Serve with mezze, or on the side with a curry…
Flatbread with some beans would be delicious too
