Lettuce, Onions & Almond Salad

Almonds are super good for you - super clever in terms of proffering good cholesterol (thus reducing the bad) - and super tasty when toasted and crushed over salads or vegetables...

Ingredients

  • Lettuce
  • Fresh Herbs (Rocket & Parsley)
  • 1/2 White Onion
  • Amonds

Wash the lettuce and lay the leaves out on a large plate

Chop the Rocket and Parsley, and slice the White Onion

If you can buy Roasted Almonds – brilliant – just crush them!  If not – heat a pan and lightly toast a handful, stirring all the time until they start to smell nutty, and start to colour a little (not too much – burnt nuts are not good). Then take them off the heat, take the skins off and then crush them

Throw your crushed Almonds over the salad, and dress with some Lemon Juice and Rape Seed Oil

[Alternatively you could make a good dressing with a teaspoon of Homemade Mayonnaise, a really good squeeze of Lemon Juice, a teaspoon of White Wine Vinegar and a drizzle of Rape Seed Oil]

This is an excellent salad to go with roasted or grilled chicken – and also great with white fish, like brill or flounder
