Lettuce, Chives, Onions

Filled with the joys of Spring, these chives were delicious sprinkled over a simple salad of lettuce leaves, chopped cucumber and diced red onion. This refreshing and upbeat salad is not only deliciously healthy, but is also fabulously quick and easy to prepare; a great side dish for fish or grilled meat.

Ingredients

  • Lettuce
  • Cucumber
  • Red Onion
  • Chives
  • Lime or Lemon
  • Rape Seed Oil

Wash and carefully dry the Lettuce leaves and lay them out on a plate

Finely dice some Red Onion

Wash the chop the Chives

Wash and chop the Cucumber

Arrange the Red Onion, Chives and Cucumber all over the Lettuce, and lightly dress with Lemon juice and a little drizzle of Rape Seed Oil
