Crush a Clove Garlic in a pestle & mortar, or chop it very finely
Add 4 or 5 tablespoons of 0% Greek or Natural Yoghurt to a bowl
Mix in the crushed Garlic, a big squeeze of Lemon Juice, a little Lemon Zest and some ground Black Pepper
Taste – add a little Salt if you prefer, and more Lemon or Garlic
If you like your dip a little spicy – add some fresh chopped Chilli, or some chopped Piquante Peppers
Just before you’re ready to eat – stir in some chopped Fresh Herbs and put into a clean bowl to serve
In terms of herbs… Parsley goes with pretty much anything – Basil is great with pasta dishes, or something a bit Italian – Coriander or Mint would work with Middle Eastern dishes or something spicy
